It’s summertime and temperatures are spiking across the country! So when you want a lighter side dish to go alongside your grilled steak or chicken, this Whole30 Herby Mashed Cauliflower will become your next go-to. You’ll get tons of flavor, but this side won’t weigh you down like rich and creamy mashed potatoes.

Herb stems are just as flavorful as the leaves. The tender stems of herbs like cilantro and parsley should be chopped up and used just like the leaf. Plus, it’s so much faster to just start chopping, rather than take the time to pull the individual leaves off each stem. So not worth it, in my opinion. Save the time and just chop it all up together. More flavor, less prep time.

Farmers Market Ingredients and Substitutions

Cauliflower

Cauliflower can typically be found at the farmers market from late spring through summer and fall. The heads are typically a creamy white color, but you’ll also find purple and golden orange heads as well. They all taste the same, so use them interchangeably in your recipes. 

Also, if your cauliflower comes with the leaves, don’t throw those out! Cauliflower leaves are pretty tasty, and can be used just like kale. These cauliflower leaf chips are a great snack, and you’ll be getting even more out of your farmers market purchase.

Green garlic sounds like a fancy ingredient, but it’s just early harvested garlic. It looks a lot like scallions, because the garlic bulb has not yet developed. Tips and Tricks

Mashed cauliflower can be just as smooth as mashed potatoes. While totally not necessary, I recommend using a food mill or ricer to get the smoothest and fluffiest cauliflower. Of course, you can also leave your cauliflower in a more rustic, chunky mash if that’s the kind of texture you like. Totally up to you and your mood that day.

Believe it or not, this herby mashed cauliflower makes great leftovers, and even freezes well. The key, though, is that you need to reheat it uncovered on the stove. This will prevent the texture from becoming too watery.

Whole30 Herby Mashed Cauliflower

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

When you want a lighter side dish to go alongside your grilled steak or chicken, this Whole30 Herby Mashed Cauliflower will become your next go-to.

Ingredients

  • 1 cup vegetable stock
  • 1 head cauliflower, cut into large chunks
  • 3 tbsp extra virgin olive oil or ghee
  • 2 stalks green garlic, chopped finely
  • 3 tbsp cilantro, finely chopped
  • 2 tbsp parsley, finely chopped
  • Salt and pepper, to taste

Instructions

  1. In a medium to large sized pot, bring the vegetable stock to a boil. Add the cauliflower to the pot and cover. Steam until cauliflower is very tender, approximately 10 minutes.
  2. Drain the cauliflower.
  3. Mash the cauliflower by running the pieces through a food mill, ricer, or blender.
  4. Stir in the olive oil, green garlic, and herbs. If using a blender, blend half of the herbs while blending the cauliflower for a bright green mash.
  5. Season the mashed cauliflower with salt and pepper, to taste.
