Okay, okay, I’m giving in and joining the Barbie craze! Pink does not top my favorite color list (hello, yellow), but I cannot deny that the set and costume designs for this movie are phenomenal. And the bright, cheery colors are a welcome change from all the dark, dreary Disney adaptations as of late. 

And if anyone is going to enjoy a pink latte, it’s Barbie. Am I wrong? 

Farmers Market Ingredients and Substitutions

Beets

This Beetroot Latte is perfect for using up leftover beets. If you have one or two beets leftover in your bunch (like if you were to make this delicious salad), roast ’em up and blitz them into this drink! Beets are naturally sweet and earthy, so is it really that much of a stretch to turn them into a fancy latte?

Whole Milk

I prefer using whole milk whenever I can, but you can use other milks in this latte. However, please note that most alternative milks, such as almond and oat milk, can be filled with stabilizers and additives, which can affect the texture and flavor of this latte. Also, these alternative milks might not froth as nicely as dairy milk (don’t worry, it’ll still taste good).

Tips and Tricks

My Pink Beetroot Latte is at its smoothest, creamiest, dreamiest self when using a high powered blender. The best blender for this is a Vitamix, which has enough power to not only blend the beets into an ultra smooth drink, but also to keep the latte hot.

But if a Vitamix is out of your price range, I’ve found this Oster blender to do quite well on the Smoothie setting.

I also love my countertop milk frother. Simply add in your milk of choice, and this thing will heat it up and froth it for you perfectly. 

Variations

Iced Beetroot Latte 

For an Iced Beetroot Latte, pour your Pink Beetroot Latte base over ice, then top with cold frothed milk. 

Beetroot Mocha (or, the Red Velvet Latte)

If you’d like a chocolatey twist on the Pink Beetroot Latte, add a tablespoon of cocoa powder to the base when you are blending it up. 

Dirty Beetroot Latte

Borrowing the common phraseology of chai lattes, add a shot of espresso for a Dirty Beetroot Latte. 

But what about the leftovers?

Leftover Pink Beetroot Latte base can be stored in an airtight container in the refrigerator for up to three days. If you want a hot latte, gently heat the base on the stove before adding your frothed milk. Otherwise, enjoy your leftovers as a perfect Iced Beetroot Latte.

Pink Beetroot Latte

Yield: 4 Servings
Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes

This Pink Beetroot Latte is sweet, creamy, and a beautiful Barbie pink! And it's infinitely customizable to your tastes with tons of variations.

Ingredients

Pink Beetroot Latte Base

  • 2 large or 4 small beets
  • 2 cups whole milk
  • ½ tsp ground ginger
  • 1 tsp ground cinnamon

Per individual Latte

  • ⅔ cup Pink Beetroot Latte Base
  • ½ cup whole milk

Instructions

  1. Preheat oven to 400°F.
  2. Cut large beets into quarters (no need to cut small beets), and wrap in aluminum foil. Place foil packet in the oven and roast until beets are soft, about 40 minutes.
  3. Add beets, milk, ginger, and cinnamon to a high powered blender, and blend until smooth. Use a smoothie setting if your blender has one.
  4. To make an individual latte, add ⅔ cup of the latte base to a mug, then top with your frothed milk.
